Ladies finger kara kuzhambu goes well with the plain white rice and idli. Ladies finger is a very healthy vegetable with high nutritional value adding this to our diet will slow down or prevent diabetes.
Sauté ladies finger (okra) pieces in a pan for 5 minutes gently and keep it aside.
Heat oil in a pan. add mustard seeds, cumin seeds, split black gram, split Bengal gram, coriander leaves, curry leaves and sauté. Once the mustard seed stop splattering add onion and sauté.
Now add the tomato, ladies finger (okra) pieces and sauté until tomato become mushy and oil starts to separate.
Now add the turmeric powder, chili powder, coriander powder, water as needed, salt and cook until the ladies finger is cooked and masala raw smell is gone. NOTE: add water based on your curry thickness.
Now add the tamarind juice. Cook until the tamarind's raw smell is gone. Once the kuzhumbu reached the right thickness remove from heat and serve.
