Tamarind - 1 goose berry size (soaked in little water)
Dry roast ingredients under section "---- Dry roast ------------------" one by one individually and grind them to powder individually. Now grind the ingredients under section "-- Roast and grind to paste ---", all the ingredients powder into a thick fine paste by adding little water as possible.
Slit the Kathirikai (Egg plant or Brinjal) and stuff the with ground masala. i.e. not all of the masala as need to stuff them.
In pan heat oil. add cumin seeds once tempered. now add Shallot (sambar onion) and sauté until they become translucent (golden brown).
Now place the stuffed Kathirikai (Egg plant or Brinjal), simmer and sauté. Once well sautéed now add the rest of the masala. Add water s needed and salt as needed and bring to boil in simmer.
