INGREDIENTS:
- Kambu (Pearl Millet) - 1/2 kilogram
- Mudakathan leaf - 2 hand full
- Fenugreek seed - 50 grams
- Coriander leaves - from 2 bunch
- Coriander leaf - little
- Chopped Shallot (Sambar onion) - 50 grams
- Chopped Green chili - 3
- Oil - as needed
- Salt - as needed
PREPARATION:
- Soak kambu (pearl millet), fenugreek seeds submerged in water for at least 2 hours.
- Grind mudakathan leaves, water as needed into fine thick paste.
- Grind soaked kambu (perl millet), fenugreek seeds, coriander leaves, curry leaves into to a dosai batter.
- Now add the ground mudakathan leaves paste to dosai batter, salt as needed, chopped onion, chopped green chili and beat well.
- Now make dosai with the batter and serve.

- Heat the flat iron skillet or non-stick tawa pan well.
- Pour a spoonful of batter in the center, spread with the back of the spoon to a thin round.
- Once this side is cooked, sprinkle oil around the dosai, flip it over and cook until the dosai is cooked on the other side.
