INGREDIENTS:

  1. Mudakathan Keerai (leaves) - from 1 bunch
  2. Tamarind - little
  3. Shredded jaggery - 3 teaspoon (tsp.)
  4. Vadagam (optional) - 1 teaspoon(tsp.)
  5. Garlic clove - 10 count
  6. Dry chili - 5 count
  7. Ginger - small piece
  8. Cumin seed - 1/2 teaspoon (tsp.)
  9. Black pepper - 1/2 teaspoon (tsp.)
  10. Oil - 2 teaspoon (tsp.)
  11. Salt - as needed
  12. ----------------------------------------------
  13. --- For tempering ---------
  14. ----------------------------------------------
  15. Sesame oil - 4 teaspoon (tsp.)
  16. Mustard seed + split black gram - 1 teaspoon (tsp.)
  17. Asafoetida powder - a pinch

PREPARATION:

  1. In a pan heat oil. add vadagam, garlic cloves, dry chili, ginger, Cumin seeds, black pepper and sautae them.
  2. Now add mudakathan Keerai (leaves) and sauté it.
  3. Now add tamarind piece, salt as needed, and remove from heat and cool down to root temperature. Add jaggery if you like when cooled to room temperature.
  4. Now ground the sauteed mudakathan Keerai (leaves), shredded coconut and grind to thick paste.
  5. In a pan heat sesame oil. add Mustard seed + split black gram, Asafoetida powder and sauté until the mustard seeds stop spattering.
  6. Now add ground mudakathan Keerai (leaves) paste and cooking until oil seperates then serve.

NOTES:

  1. You can make thuvyal from curry leaves, mint leaves, vallarai keerai, thoothuvalai keerai in the same way.
  2. It does not go bad for a week. if you want more shelf life you can add vinegar, more oil.
