INGREDIENTS:
- Green brinjal - 1/4 kilogram
- Cooked rice - 3 cup
- Tamarind - small gooseberry size
- Curry leaf - 10 count
- Turmeric powder - 1/2 teaspoon (tsp.)
- Salt - as needed.
- -- Dry roast and Grind to powder --
- Bengal gram - 1 tablespoon (tbsp.)
- Black gram - 1 teaspoon (tsp.)
- Dry chili - 2
- Coriander seed - 1 teaspoon (tsp.)
- Blanched raw peanut - 1 tablespoon (tbsp.)
- -- For Tempering --
- Mustard seed - little
- Bengal gram - little
- Oil - 1 tablespoon (tbsp.)
PREPARATION:
- Dry roast the ingredients under section "-- Dry roast and Grind to powder --" and grind to a powder after cooling down to room temperature.
- Soak the tamarind in little water and get a thick juice.
- Cut the brinjal into small pieces.
- In a pan heat Oil. Add mustard seeds, bengal gram and sauté until the mustard seeds stop splattering.
- Now add the brinjal pieces and sauté for a minute.
- Now add turmeric powder, little salt and sauté for 1 or 2 minutes.
- Now add tamarind juice and cook until all the water is evaporated (make sure brinjal is cooked).
- Now add the ground powder, curry leave and mix well until all the ingredients come together. NOTE: adjust powder quantity to your spice level.
- Now add the cooked rice3 and gently mix until the rice is well coated then serve.
NOTES:
- Goes well with poriyal, potato masala, chips
- Cooking Time: 15 minutes
