INGREDIENTS:
- Raw idly rice - 1 kilogram
- Black gram - 125 grams
- Split green gram - 125 grams
- Coconut - 2
- Ghee - 4 teaspoon (tsp,)
- Salt - as needed
- Oil - to deep fry
PREPARATION:
- Soak raw idly rice submerged in water for at least 3 hours. After the rice got soaked. Grind in a wet grinder or mixer to fine thick paste by adding little water as possible. Heat butter and the rice dough and roast a little bit to remove some moisture.
- Dry roast black gram, green gram to golden brown. In a mixer make a fine powder by sifting again and again. NOTE: ** if lumps are there seedai will splatter when you fry them.
- Shred the coconut and roast them until moisture is gone.
- In bowl add rice dough, gram powder, roasted coconut, salt to a soft dough. Now a make small pebble size balls out of the dough. Spread these balls and dry them until all the moisture is gone. NOTE: ** don't make the balls tight by pressing hard should be soft otherwise it will splatter when you fry them. if hard pressed you need helmet when frying :)
- Heat oil for frying in a pan. Now fry the balls in batches to golden brown and serve.
NOTES:
- ** For better result at each stage make sure very very little water is added.
