INGREDIENTS:

  1. Small potato (Boiled and pealed ) - 10 count
  2. Cumin seed - 1 teaspoon (tsp.)
  3. Green chili paste - 1/2 teaspoon (tsp.)
  4. Ginger paste - 1/2 teaspoon (tsp.)
  5. Garlic paste - 1/2 teaspoon (tsp.)
  6. Mint leaf - a handful
  7. Yogurt or curd - 6 tablespoon (tbsp.)
  8. Shallot (sambar onion) - 10 count
  9. Chili powder - 1/2 teaspoon (tsp.)
  10. Oil - 4 teaspoon (tsp.)
  11. Salt - as needed.

PREPARATION:

  1. In a pan heat oil. add 1/2 of cumin seeds. Once they stop splattering. Now add the boiled potato and sauté.
  2. No add chili paste, ginger paste, mint leaves and sauté until the raw smell is gone.
  3. No add the 3 teaspoon (tsp.) yogurt or curd, salt and sauté until yogurt or curd is observed well. i.e. dry and come together. Remove from heat and keep it aside.
  4. Now 3 teaspoon (tsp.) of oil. add rest of the cumin seeds and once they stop splattering add the shallot (sambar onion) and sauté until they become translucent (golden brown).
  5. Now add he garlic paste, chili powder, rest of the yogurt or curd, little salt and situate until oil separates and becomes a thick masala.
  6. Now add the potato and mix well. Lower the heat and cook for few minutes or until the masala is well coated. Before you remove from heat garnish with coriander leaves and serve.

NOTES:

  1. Goes well with curd rice, sambar rice, rasam rice.
