INGREDIENTS:

  1. Plantain - 1
  2. Tamarind - a small gooseberry size
  3. Mustard seed - 1/2 teaspoon (tsp.)
  4. Turmeric powder - 1/4 teaspoon (tsp.)
  5. Dry chili powder - 1 teaspoon (tsp.)
  6. Oil - 1 tablespoon (tbsp.) or as needed
  7. Salt - 3/4 teaspoon (tsp.) or as needed

PREPARATION:

  1. Soak tamarind in 1/2 cup water and get juice.
  2. Remove the skin from plantain and cut into pieces (cubes).
  3. In pan add tamarind water, plantain pieces, turmeric powder and cook for at least 15 minutes or until the plantain pieces are cooked.
  4. Heat oil in a pan. Add mustard seeds. once they stop splattering add the cooked plantain pieces, increase the heat and sauté for at least 5 minutes.
  5. Now reduce the heat. add salt, chili powder and sauté for 4 more minutes or until the plantain is roasted well to golden brown. NOTE: no water should be there only oil.
