INGREDIENTS:

  1. Bitter gourd - 1/4 kilogram
  2. Ginger paste - 1/4 teaspoon (tsp.)
  3. Garlic paste - 1/4 teaspoon (tsp.)
  4. Chili powder - 1 teaspoon (tsp.)
  5. Coriander powder - 1/2 teaspoon (tsp.)
  6. Garam masala powder - 1/4 teaspoon (tsp.)
  7. Mango powder - 1/4 teaspoon (tsp.)
  8. Fennel seed powder - 1/4 teaspoon (tsp.)
  9. Dry ginger powder - 1/4 teaspoon (tsp.)
  10. Gram flour - 6 teaspoon (tsp.)
  11. Rice flour - 2 teaspoon (tsp.)
  12. Corn flour - 2 teaspoon (tsp.)
  13. Finely chopped curry leaf - 2 teaspoon (tsp.)
  14. Lemon juice - 2 teaspoon (tsp.)
  15. Salt - as needed
  16. Oil - for deep fry.

PREPARATION:

  1. Thinly slice the bitter gourd horizontally (like rings) then remove the seeds and keep it aside.
  2. Now steam the bitter gourd rings by adding little water as possible with salt.
  3. Marinate the steamed bitter gourd rings by adding all the ingredients except oil for 10 minutes. NOTE: basically mix all the ingredients.
  4. Heat oil in a pan to 350 degree Fahrenheit . Now deep fry the bitter gourd until they turn golden brown and serve. NOTE: add bitter gourd in batches to keep the oil temperature close to 350 degree Fahrenheit .
