INGREDIENTS:

  1. Bitter gourd - 2
  2. Tamarind - 1 small goose berry size
  3. Bengal gram flour - 2 teaspoon (tsp.)
  4. Maida flour - 1 teaspoon (tsp.)
  5. Rice flour - 1 1/2 teaspoon (tsp.)
  6. Corn flour - 1/2 teaspoon (tsp.)
  7. Chili powder - 1/2 teaspoon (tsp.)
  8. Oil - 1 cup
  9. Salt - to taste.

PREPARATION:

  1. Thinly slice the bitter gourd horizontally (like rings) then remove the seeds and keep it aside
  2. Soak tamarind in 1/4 cup of water for 10 minutes and get thick tamarind juice.
  3. Marinate sliced bitter gourd for 15 minutes by adding salt to taste and tamarind juice.
  4. In a wide bowl add bengal gram flour, Maida flour, rice flour, corn flour, chili powder, 1 teaspoon (tsp.) of salt and mix well.
  5. Now add little by little the dry flour mixture to the marinated bitter gourd and coat well the bitter gourd. Add 2 teaspoon (tsp.) of water if needed.
  6. Heat oil in a pan to 350 degree Fahrenheit . Now deep fry the bitter gourd until they turn golden brown and serve. NOTE: add bitter gourd in batches to keep the oil temperature close to 350 degree Fahrenheit .
