Thinly slice the bitter gourd horizontally (like rings) then remove the seeds and keep it aside
Soak tamarind in 1/4 cup of water for 10 minutes and get thick tamarind juice.
Marinate sliced bitter gourd for 15 minutes by adding salt to taste and tamarind juice.
In a wide bowl add bengal gram flour, Maida flour, rice flour, corn flour, chili powder, 1 teaspoon (tsp.) of salt and mix well.
Now add little by little the dry flour mixture to the marinated bitter gourd and coat well the bitter gourd. Add 2 teaspoon (tsp.) of water if needed.
Heat oil in a pan to 350 degree Fahrenheit . Now deep fry the bitter gourd until they turn golden brown and serve. NOTE: add bitter gourd in batches to keep the oil temperature close to 350 degree Fahrenheit .
