Caramel Payasam recipe

A Very different Delicious Payasam with a twist. Caramel will give a refreshing aroma.

INGREDIENTS:

  1. Raw rice - 2 teaspoon (tsp.)
  2. Milk - 200 milliliter
  3. Sugar - 4 teaspoon (tsp.)
  4. Ghee - 1 teaspoon (tsp.)
  5. Cashew nut - 5 count
  6. Raisin - 5 count
  7. Cardamom powder - a pinch
  8. Salt - 1 pinch
  9. -----------------------------
  10. ---- For making caramel ---
  11. -----------------------------
  12. Sugar - 2 teaspoon (tsp.)
  13. Water - 1 teaspoon (tsp.)

PREPARATION:

  1. Soak the rice in water for 30 minutes. Filter all the liquid and grind to coarse (1 or 2 spin)
  2. Heat pressure cooker and make Caramel. i.e. simmer cook ingredients under "---- For making caramel ---" and stir until the sugar is melted and color changes to amber then dark brown color like jaggery syrup.
  3. Once the caramel is formed add the rice and mix well until the rice pieces are well coated.
  4. Now add milk, 1 cup of water, salt and pressure cook it for 3 whistle.
  5. Once the pressure is released add sugar, cardamom powder. Mix well and cook for 3 to 5 minutes.
  6. Caramel payasam is ready to serve.

NOTES:

  1. Preparation time: 20 minutes, Cooking Time: 20 minutes, Total time: 40 minutes
  2. Unsalted caramel from store can be substituted
