  1. Macaroni - 1 cup
  2. Mozzarella cheese - 1/2 cup
  3. Maida flour (optional) - 1 teaspoon (tsp.)
  4. Milk - 1 cup
  5. Cumin seed powder - 1 tablespoon (tbsp.)
  6. Black pepper - 3 tablespoon (tbsp.)
  7. Chopped onion - 1/4 cup
  8. Chopped tomato - 1/4 cup
  9. Chopped Garlic - 9 cloves
  10. Cinnamon stick - 1 inch
  11. Olive oil - 1 tablespoon (tbsp.)
  12. Unsalted butter - 1 tablespoon (tbsp.)
  13. Salt - as needed


  1. Dissolve maida flour in little water. NOTE: make sure no lump is formed
  2. Boil 4 cups of water. Add little oil to the boiling water. Now add the macaroni to the boiling water and cook for 6 to 8 minutes. Now drain all the liquid from the cooked macaroni and keep it aside. NOTE: Macaroni cooking time depends on different time. You can pick one and taste to make sure its cooked.
  3. Heat olive oil, butter in a pan. Add cinnamon stick, onion and sauté until the onion turns translucent (golden brown).
  4. Now remove the cinnamon stick and add the tomato. Cook the tomato until it become mushy.
  5. Now add the cheese. Once it starts to melt add black pepper powder, milk and bring to boil. Once the milk reduce to half add the dissolved maida flour. Stir and cook for 2 seconds until the milk thickens. NOTE: sprinkle water if needed and make sure it does not get burnt.
  6. Now add the cooked macaroni, salt as needed. Stir and cook for 2 minutes.
  7. Remove the macaroni from heat (stove). Add cumin powder. Mix well and serve.
