INGREDIENTS:

  1. Egg noodles - 1 packet
  2. Egg - 3
  3. Chopped Squid - 1
  4. Shrimp - 5
  5. Crab stick - 5
  6. Chopped Capsicum - 1
  7. Chopped Carrot - 1
  8. Chopped Green bean - 10
  9. Chopped Cabbage - 1/4 cup
  10. Chopped Onion - 1
  11. Chopped Scallion - a bunch
  12. Chopped Ginger - 1/4 inch
  13. Chopped Garlic - 5 cloves
  14. Chopped Green chili - 3
  15. Black pepper powder - 1/2 tablespoon (tbsp.)
  16. Soy sauce - 1/2 tablespoon (tbsp.)
  17. Fish sauce - 1/2 tablespoon (tbsp.)
  18. Chili sauce - 1 tablespoon (tbsp.)
  19. Oyster sauce - 1 tablespoon (tbsp.)
  20. Oil - 2 tablespoon (tbsp.)

PREPARATION:

  1. Make scrambled egg with the eggs.
  2. Cook the noodles and add 1/2 tablespoon (tbsp.) of oil and mix them well. NOTE: noodle should be cooked dry i.e. not sticky.
  3. Heat 1 tablespoon (tbsp.) of oil in a non-stick pan, reduce heat and add ginger, garlic and sauté until the raw smell is gone.
  4. Now add onion and sauté until they are 1/4 sautéed. Increase the heat.
  5. Now add green beans, cabbage and sauté them.
  6. Now add carrot, capsicum, green chili and sauté for 3 minutes then transfer the vegetables to bowl.
  7. In the same non-stick pan heat 1/4 teaspoon (tsp.) oil, add squid, crab stick, shrimp and sauté for 2 minutes.
  8. Now add the scrambled egg, sautéed vegetables, black pepper powder, scallion and mix well.
  9. Now add all the sauces (soy, fish, chili, oyster) and mix well.
  10. Now add the noodles and with the help of 2 forks mix well without breaking the noodles until they are fully covered with sauce and vegetables.
  11. Sauté for few seconds and serve.

NOTES:

  1. High heat is the key to cooking this recipe.
  2. Gas stove and Chinese wok is a great combination for cooking these kind of food.
