INGREDIENTS:

  1. Raw rice - 2 cup
  2. Par boiled rice - 2 cup
  3. Black gram - a handful
  4. Cooked rice - a handful
  5. Shredded coconut - a handful
  6. Cooking soda - a pinch
  7. Salt - as needed

PREPARATION:

  1. Soak raw rice, par boiled rice, black gram in water for minimum 3 hours. Drain liquid and keep it aside.
  2. In a wet grinder add cooked rice and grind well.
  3. Now add soaked rice and black gram, water as needed. Once the batter is coarsely grounded add coconut and grind. NOTE: add water as needed to get a batter to make appam.
  4. Now add salt to ground batter mix well and keep overnight for fermentation.
  5. Once fermentation is complete make appam in appam skillet serve.

  9. Heat appam pan and reduce heat to simmer.
  10. Now add a ladle of batter and spread around the appam pan walls. i.e. lift the pan swirl the batter.
  11. Cover and cook in simmer for 1 minute or until the appam is cooked and serve.

NOTES:

  1. Goes well with coconut milk
