Clean and cut the squid into rings or small pieces.
Add turmeric powder, salt to taste, curry masala powder to squid mix well and marinate them.
Slice onions. Cut potato into fine pieces.
In a pan heat oil, add mustard seed, fennel seed, fenugreek seed. Once the mustard seed start to splatter add the onion and cook until it turns golden brown.
Now add the marinated squid, ginger, garlic paste and cook until the raw smell is gone.
Now add the potato, 1 cup water and mix well. Simmer and cook for 15 minutes until the potato is cooked well. Remove the curry form heat garnish with curry leaves and serve. NOTE: stir time to time so the curry does not get burnt.
