INGREDIENTS:

  1. Brinjal - 1/4 kilogram
  2. Finely chopped onion - 1
  3. Finely chopped tomato - 2
  4. Ginger garlic paste - 1/2 teaspoon (tsp.)
  5. Chili powder - 1 teaspoon (tsp.)
  6. Turmeric powder - 1/4 teaspoon (tsp.)
  7. Coriander powder - 1 teaspoon (tsp.)
  8. Garam masala powder - 1/2 teaspoon (tsp.)
  9. Dry ginger powder - a pinch
  10. Slit green chili - 2
  11. Finely chopped Curry leaf - 5
  12. Coriander leaf - 7
  13. Sesame oil - 6 tablespoon (tbsp.)
  14. Salt - as needed

PREPARATION:

  1. Coat the brinjal with oil and roast them in open flame. (skin will shrink and brinjal will crack open). Remove the skin and mash them by hand.
  2. Now add chili powder, coriander powder, turmeric powder, garam masala powder, salt as needed, curry leaves, dry ginger powder to mashed brinjal; mix well and keep it aside for 10 minutes.
  3. Heat oil in a pan. Now add onion and sauté until it turns translucent (golden brown).
  4. Now add the tomato and sauté until oil separates.
  5. Now add ginger garlic paste and sauté until raw smell is gone.
  6. Now add the mashed brinjal and sauté in medium heat until oil separates. Now garnish with coriander leaf and serve.

NOTES:

  1. Goes well with chapati, parotta, bread sandwich, curd rice.
