INGREDIENTS:

  1. Baby indian brinjal - 1/4 kilogram
  2. -- For stuffing --
    1. Finely chopped onion - 4
    2. Ginger, garlic paste - 1 teaspoon (tsp.)
    3. Garam masala powder - 1 teaspoon (tsp.)
    4. Chili powder - 2 teaspoon (tsp.)
    5. Coriander powder - 1 teaspoon (tsp.)
    6. Turmeric powder - 1/2 teaspoon (tsp.)
    7. Unsalted butter - 1 teaspoon (tsp.)
    8. Coriander leaf - 15
    9. Salt - as needed
  3. Oil - 1/4 cup

PREPARATION:

  1. Grind all the ingredients under the section "-- For stuffing --" well and make stuffing masala.
  2. Slit the brinjal on 4 sides without breaking them and stuff them with the masala.
  3. In a pan heat oil. Add brinjal one by one and rest of the masala. Simmer and cook this until the brinjal is cooked well and oil separates.
  4. Garnish with coriander leaves and serve.

NOTES:

  1. Goes well with white rice, puri and chapati.
