INGREDIENTS:

  1. Gram flour - 1 1/2 cup
  2. Sugar - 1 cup
  3. Baking powder - 1/4 teaspoon (tsp.)
  4. Ghee - 1 tablespoon (tbsp.)
  5. Cashew - 10
  6. Cardamom - 6
  7. Raisins - 10
  8. Water - 1/2 cup
  9. Oil - 1/2 liter for deep frying.

PREPARATION:

  1. Mix gram flour, baking powder, water and make batter (dosai batter consistency)
  2. In a pan add 1/2 cup water, sugar and boil it reaches one string consistency. (refer to image below).
  3. -- Making boondi --
    1. Heat oil to 350 degree Fahrenheit.
    2. Hold the boondi ladle (refer to image below) and pour some batter and tap the ladle slightly. Dripping will fall into the oil.
    3. Fry it for a while, no need to get crispy
    4. Drain it in a paper towel to get rid of excess oil.
  4. Once you have made Boondi with all the batter.
  5. Fry the cashews, crushed cardamom, raising in ghee and add to the boondi.
  6. Now add the boondi to the sugar syrup and let it soak 10 -15 minutes.
  7. Now get a handful of boondi and roll it to a balls (laddu) and serve.

NOTES:

  1. Check for single string consistency single sting
