INGREDIENTS:

  1. Sweet mango - 1
  2. Sugar - 1 cup
  3. Mango essence - few drops
  4. Grated ginger - 1 teaspoon (tsp.)
  5. Lemon juice - from 1 lemon

PREPARATION:

  1. Remove the skin and nut from the mango and make puree out of the pulp. NOTE: you can also cut to fine small pieces if you want to.
  2. Heat heavy pan or non stick pan. Add the mango pulp and sauté for 5 minutes.
  3. Now add the lemon juice and sauté.
  4. Now add the sugar and sauté in simmering heat for 25 minutes until the mango become thick.
  5. Now add ginger, mango essence and cook for about 3 minutes until the ginger raw smell is gone. Switch off the stove.
  6. To pack check by taking a little jam and place in a plate. if does not stick to the place. Store it in glass jar.

NOTES:

  1. Jam should be cooked in simmering heat so it does not get burnt.
  2. Don't touch the jam by hand.
  3. Make sure the bottle and the ladle are sterilized by hot water.
  4. No moisture or drop of water should be present in glass jar, jar lid, laddle.
