Finely chopped scallion (spring onion) - from 1 bunch
Black pepper powder - as needed
Oil - as required
Salt - as needed
In a bowl break and add the egg. To this add scallion, black pepper powder, salt. Now beat the egg well.
Heat a skillet apply butter or oil. pour the egg mixture in.
As the omelette starts to set, lift an edge of the omelette with a spatula and tilt the pan so that the runny, unset portion of the omelette can run underneath and start to set. Repeat on the opposite side
