In a bowl break 2 egg and add them. To this add onion, capsicum, carrot, black pepper, salt and beat well.
Heat oil or ghee or unsalted butter in a skillet. Now add half the beaten egg batter. Once cooked 3/4th now add the boil egg pieces. Once the omelette is cook roll and remove from heat and keep it aside. .
Now add more oil or ghee or unsalted butter. once heated add rest of the egg batter. Once it cooks 3/4th. Now place the cooked rolled omelette NOTE: No need to spread.
Once the omelette is cooked roll such that it becomes layers around the cooked rolled omelette and remove from heat and serve.
