INGREDIENTS:

  1. Drumstick greens (Moringa greens) - 2 cup
  2. Onion - 1
  3. Dry chili - 4
  4. Egg  - 1
  5. Turmeric powder - 1/4 teaspoon (tsp.)
  6. Salt - as needed
  7. -- For tempering --
    1. Mustard seed - 1/4 teaspoon (tsp.)
    2. Split black gram - 1/4 teaspoon (tsp.)
    3. Curry leaf - 1 sprig
    4. Oil - as needed

PREPARATION:

  1. In a pan heat oil. Add mustard seeds, black gram, curry leaves. Once the mustard stop splattering add broken dry chili, turmeric powder and sauté for few seconds.
  2. Now add the onion and sauté until the onion half cooked.
  3. Now add the drumstick greens, salt and cover with lid and cook for few minutes.
  4. Now remove the lid and sauté until the greens shrink and cooked.
  5. Now break the egg and add at the middle.
  6. Now stir continuously and sauté until the egg is cooked (like egg podimas) and serve.
