INGREDIENTS:

  1. Hard boiled egg - 4
  2. Thinly sliced onion - 2
  3. Thinly sliced tomato - 1
  4. Slit green chili - 2
  5. Ginger, garlic paste - 1 teaspoon (tsp.)
  6. Curry leaf - 8
  7. Chili flakes - 1 teaspoon (tsp.)
  8. Soy sauce - 1 tablespoon (tbsp.)
  9. Chili garlic sauce or tomato sauce - 1 1/2 tablespoon (tbsp.)
  10. Oil - 2 tablespoon (tbsp.)
  11. Salt - as needed.

PREPARATION:

  1. Roast the egg in oil and keep it aside. NOTE: make sure the egg has not water on it.
  2. In a pan heat oil. add onion, green chili, curry leaves and sauté until onion turn translucent (golden brown).
  3. Now add the ground paste and cook until the raw smell is gone.
  4. Now add the tomato, salt and cook until they become mushy.
  5. Now add the chili flakes, soy sauce, chili garlic sauce or tomato sauce and sauté until the sauces raw smell is gone. NOTE: you can use chili powder instead of chili flakes.
  6. Now add the roasted egg and sauté until the egg is well coated with masala and serve.

NOTES:

  1. Goes well with fried rice, tomato rice, rice.
