INGREDIENTS:

  1. Parboiled rice - 1 cup
  2. Black gram - 1/2 cup
  3. Shallot or small onion - 30
  4. Green chili - 4
  5. Graded coconut - 1 /14 cup
  6. Fennel seed - 1 teaspoon (tsp.)
  7. Salt - to taste.

PREPARATION:

  1. Soak parboiled rice for 4 hours. Soak black gram for 4 hours. (must be soaked separately)
  2. Finely chop shallot (small onion), green chili into fine pieces.
  3. Drain and grind black gram into a batter by adding water as needed
  4. Drain and grind rice into a coarse batter by adding water as needed.
  5. Grind coconut, onion, fennel seed, green chili into a fine paste by adding little water as possible.
  6. Now mix the batter and ground paste well by adding salt as needed.
  7. -- Making of Adai --
    1. Heat the dosai iron skillet , take one ladle full and spread the batter as we do for dosai.
    2. Drizzle little oil and once it is cooked turn to other side and cook till golden brown.

NOTES:

  1. Serve hot with coconut chutney.
