In pan add the tomatoes. Add water to the tomatoes until they submerge and cook for 3 minutes. Once the tomatoes skin wrinkles remove tomatoes from the boiling water. Now skin the tomatoes and grind them into a paste.
In a pan heat oil and add ginger, garlic and sauté until raw smell is gone.
Now add turmeric powder, coriander powder, chili powder, salt and sauté for 30 seconds.
Now add the tomato paste and mix well.
Now place a lid and cook this for 15 minutes (until the oil separates).
Now add the curry leaves after 30 second remove from heat (stove) and serve.
