INGREDIENTS:

  1. Mulai keerai | Amaranth leaves - from a bunch
  2. Shredded coconut - 2 teaspoon (tsp.)
  3. Dry chili - 1
  4. Finely chopped Shallot | Small onion - 4
  5. -- For Tempering --
    1. Mustard seed - 1/4 teaspoon (tsp.)
    2. Broken black gram - 1/4 teaspoon (tsp.)
    3. Curry leaves - 5
    4. Oil - 3 teaspoon (tsp.)
  6. Salt - to taste

PREPARATION:

  1. In a pan heat oil; add mustard seed, broken black gram and wait until the mustard seed stop splattering.
  2. Now add the dry chili (break them into small pieces by hand), curry leaves, shallots | small onion and cook until it turns golden brown.
  3. Now add the Mulai keerai | Amaranth leaves add 1/4 cup of water (or as needed) and cook until the leaves are cooked well.
  4. Now add salt to taste and coconut mix well and serve.
