INGREDIENTS:

  1. Broccoli - 1
  2. Plantain - 1
  3. Baby corn - 6 grains
  4. Onion - 1
  5. Capsicum - 1
  6. Green chili - 1
  7. Ginger - 1 inch
  8. Garlic - 4 cloves
  9. Tomato - 1
  10. Coriander leaf - 10
  11. Chili powder - 1/2 teaspoon (tsp.)
  12. Coriander powder - 1/2 teaspoon (tsp.)
  13. Black pepper powder - 3/4 teaspoon (tsp.)
  14. Garam masala powder - 1/2 teaspoon (tsp.)
  15. Cumin seed - 1/4 teaspoon (tsp.)
  16. Dry chili - 1
  17. Salt - to taste
  18. Oil - 4 tablespoon (tbsp.)

PREPARATION:

  1. Break the broccoli into to small pieces and cook or steam them.
  2. Thinly slice onion and capsicum.
  3. Chop ginger, garlic, green chili, tomato into to fine pieces.
  4. Cut plantain into small pieces and cook or steam them.
  5. Heat oil in a pan, add cumin seeds, dry chili (break them), once the cumin start to splatter add onion, green chili, ginger, garlic and sauté until onion turns golden brown.
  6. Now add baby corn, capsicum and sauté until capsicum is cooked.
  7. Now add the broccoli and cook for 2 minutes.
  8. Now add turmeric powder, chili powder, coriander powder, salt to taste, 1/4 cup of water and cook for 10 min.
  9. Now add the cooked plantain, tomato and cook for 2 minutes.
  10. Now add black pepper powder, garam masala powder.
  11. Sauté  for 1 minute and serve.

NOTES:

  1. Goes well with puri, chapati, naan.
