INGREDIENTS:

  1. Garlic - 20 cloves
  2. Shallot or sambar onion - 15
  3. Ripe tomatoes - 2
  4. Tamarind - 1 lemon size
  5. Coconut milk - 1/2 cup
  6. Turmeric powder - 1/2 teaspoon (tsp)
  7. Hot chili powder - 1 teaspoon (tsp) or to the preferred spice level
  8. Coriander powder - 1 1/2 teaspoon (tsp)
  9. Oil - 1/4 cup
  10. Mustard seeds - 1/4 teaspoon (tsp)
  11. Curry leaves (optional) - 4
  12. Salt - to taste

PREPARATION:

  1. Cut tomatoes and onion into fine pieces.
  2. Soak the tamarind in a 1/2 cup of water and get the juice.
  3. In a pan heat oil add mustard seed until it begin to splatter. Now add curry leaves and cook for 1 min. Add garlic and cook for 1 minute.
  4. Add the onions and cook it turns golden brown. Then add the cut tomatoes and cook until oil separates.
  5. Now add the turmeric powder, hot chili powder, coriander powder stir and cook for another minute.
  6. Now add the tamarind juice, coconut milk, salt to taste and bring it to boil.
  7. Reduce the heat or simmer and cook until the Kuzhambu becomes thick or the right consistency reached. i.e at least the raw tamarind smell and the garlic is cooked.
  8. Remove and serve with rice.
