INGREDIENTS:

  1. Drumstick greens - 4 cup
  2. Chopped Ladies finger - 100 grams
  3. Shredded Fresh Coconut - 1/4 cup or 1/2 cup
  4. Puffed rice - 1/4 cup
  5. Fennel seed - 1 teaspoon (tsp.)
  6. Small shrimp (optional) - 15
  7. Onion - 2
  8. Green chili - 1
  9. Salt - as needed.

PREPARATION:

  1. Powder puffed rice and  fennel seeds together.
  2. Grind coconut, green chili into a thick paste.
  3. Heat 2 cup water in a pan, add ladies finger and cook.
  4. Once ladies finger is cooked now add the drumstick leaves and cook them.
  5. Once the drumstick leaves are cooked, now add the coconut paste and cook for 30 seconds.
  6. Now add the powdered puffed rice, salt. Mix well and cook. NOTE: make sure no lump are formed.
  7. Now add the shrimp and cook until shrimp is cooked and serve. NOTE: if your koottu is too thick add water as needed.
