INGREDIENTS:

  1. Soaked raw rice - 2 cup
  2. Thinly sliced onion - 2
  3. Thinly sliced tomato - 2
  4. Slit green chili - 2
  5. Coriander leaf - a handful
  6. Mint leaf - a handful
  7. Ginger garlic paste - 1 teaspoon (tsp.)
  8. Chopped Vegetables (carrot + green beans + green peas) - 1 cup
  9. Chili powder - as needed to your spice level.
  10. Turmeric powder - 1/4 teaspoon (tsp.)
  11. Fresh coconut milk - 3 + 3/4th cup
  12. Ghee - 1 teaspoon (tsp.)
  13. Cashew nut - 10 count
  14. Oil - as needed
  15. Salt - as needed
  16. ---------------------------------
  17. -- For tempering --
  18. ---------------------------------
  19. Cinnamon stick - small piece
  20. Clove - 1 or 2 count
  21. Bay leaf - 1
  22. Crushed Cardamom - 1 or 2 count

PREPARATION:

  1. In a pan heat oil. add ingredients under section "-- For tempering --" and sauté until the aroma is release.
  2. Now add onion and sauté until they become translucent.
  3. Now add ginger garlic paste and sauté until the raw smell is gone.
  4. Now add tomato, green chili and sauté until the oil separates.
  5. Now add the vegetables (carrot + green beans + green peas) and sauté. Once sauteeed add chili powder, turmeric powder, salt and mix well.
  6. Now add coriander leaves, mint leaves and sauté. Once sautéed now add the soaked rice and mix well.
  7. In a electrical rice cooker add coconut milk, rice, salt if needed and cook the biryani. Add roasted cashew nut in ghee and add to biryani before you serve.
