INGREDIENTS:

  1. Orange - 4 to 5
  2. Basmati rice - 1 cup
  3. Onion - 2 to 3
  4. Ginger garlic paste - 2 teaspoon (tsp.)
  5. Coriander leaf - a handful
  6. Mint leaf - 1/2 handful
  7. Carrot - 1 or 2
  8. Kashmiri chili powder - 1 teaspoon (tsp.)
  9. Garam masala powder - 1/2 teaspoon (tsp.)
  10. Oil - 2 teaspoon (tsp.)
  11. Salt - as needed

PREPARATION:

  1. Squeeze the orange and get 1 1/2 cup of juice. (make sure you remove the seeds)
  2. Soak the basmati rice submerged in water for at least half an hour.
  3. Cut the onions into a thin slices. Shred the carrots.
  4. In a pressure cooker heat oil. Now add garam masala, onion, little salt and sauté until the onion turn translucent. Once onion is sautéed add ginger garlic paste and saute until the raw smell is gone.
  5. Now add the coriander leaves, mint leaves and sauté.
  6. Now add Kashmiri chili powder and sauté until raw smell is gone.
  7. Now add the orange juice, salt as needed and bring to boil.
  8. Now add the soaked rice. Place the lid and cook until the rice is 3/4th cooked.
  9. Now add the shredded carrots. place and cook in dum in low heat for 5 to 10 minutes and serve.
