INGREDIENTS:

  1. Fresh shredded coconut - from 1 whole coconut
  2. Cooked rice - 1 cup
  3. Coconut oil - 2 teaspoon (tsp.)
  4. Salt - as needed
  5. ----------------------------
  6. -- For Tempering --
  7. ----------------------------
  8. Dry chili - 5 count
  9. Mustard seed - little
  10. Split black gram - little
  11. Spit Bengal gram - little
  12. Curry leaf - 1 sprig

PREPARATION:

  1. In a pan heat coconut oil. add ingredients under section "-- For tempering --" and sauté until the curry leaves stop splattering and the grams are roasted.
  2. Now add fresh shredded coconut, salt as needed. Roast the coconut until they turn color and aroma is released.
  3. Now add cooked rice and mix well until all the ingredients come together and serve.
