Mix all the ingredients except oil in a bowl and marinate for at least 15 minutes.
In a pan heat 2 teaspoon (tsp.) of oil. now add the marinated bitter gourd slices and mix well. Place a lid and cook this for 2 to 3 minutes with out burning. Now add 1 or 2 teaspoon (tsp.) oil and fry them until they are cooked and oil separates. NOTE: adjust the heat so it does not get burnt. Sprinkle little water if needed.
Since we did not add tamarind or yogurt this will be bitter. good fro diabetic and bitter food lovers.
