INGREDIENTS:

  1. Thinai rice (Foxtail millet) - 3/4 tumbler
  2. Raw rice - 1/4 tumbler
  3. Shredded fresh coconut - 1/2 cup
  4. Ripe banana - 1
  5. Jaggery - as needed
  6. Baking soda - pinch
  7. Ghee - as needed

PREPARATION:

  1. In bowl add Thinai rice (Foxtail millet), raw rice. add water as needed such that rice and Thinai rice submerge. Soak this for at least 2 hours. Once soaked drain the water.
  2. In a mixer or wet grinder grind soaked rice, thinai rice, shredded coconut into a thick batter by adding water as needed. Keep this batter for at least 5 hours or until they are fermented.
  3. Now add banana (crush to paste), Jaggery, baking soda, salt as needed and mix well.
  4. Heat paniyaram pan add add few drops of ghee inside the holes (mould) and reduce the heat medium.
  5. Now fill the holes up to 3/4th with the batter. Cook the bottom side to golden. Flip and cook the other side to golden brown and serve. NOTE: make sure its good.
