INGREDIENTS:

  1. Wheat or Maida or all purpose flour - 100 grams
  2. Rava - 1 tablespoon (tbsp.)
  3. Ghee - 2 teaspoon (tsp.)
  4. Cooking soda - a big pinch
  5. Sugar - 1/2 teaspoon (tsp.)
  6. Water - 1/3 cup.
  7. Oil - for deep frying
  8. Salt - a pinch.
  9. -- For Stuffing --
    1. Sugar - 1/2 cup
    2. Fresh grated coconut - 1/2 cup
    3. Roasted gram - 1/2 cup
    4. Cardamom seed - 3 (skin removed)

PREPARATION:

  1. In a wide bowl , sieve Maida and cooking soda.
  2. Now add rava, salt, water  (add water if needed) and make a smooth pliable soft dough like you do it for chapatti. Cover with wet cloth or polythene sheet for 30 to 60 minutes.
  3. -- Making the stuffing --
    1. Roast the coconut until the moisture is gone to light golden brown.
    2. In a mixer or blender add the roasted coconut, roasted gram, cardamom seeds. Pulse this once or twice to make a coarse powder by not adding any water.
  4. -- Making the Samosa --
    1. Make small balls out of the dough and keep it aside. Flatten the balls into a slightly thick circle shape sheet like you do it for chapatti. refer image below.
    2. For each sheet, keep 2 teaspoon (tsp.) of filling in the middle. Close one side to make a semi circle. Now seal the corners by pressing with your finger (dip in water your finger to avoid sticking if needed).
    3. Heat oil in a kadai and deep fry on both sides till golden brown and serve.
