INGREDIENTS:

  1. Maida flour - 1 cup
  2. Sugar - 1 cup
  3. Egg - 2 (room temperature)
  4. Shredded carrot - 1 cup
  5. Baking soda - 1/4 teaspoon (tsp.)
  6. Melted unsalted butter - 1 cup
  7. Cashew nut - 10
  8. Cardamom powder - 1/4 teaspoon (tsp.)
  9. Salt - 1/4 teaspoon (tsp.)

PREPARATION:

  1. Sift with sieve maida flour, salt, baking soda in a bowl.
  2. Break egg in bowl and beat with egg beater or whisk until it becomes fluffy. Now add butter, sugar to the egg and whisk well until the sugar is dissolved.
  3. Now add maida flour little by little to avoid lump and whisk well. Now add shredded carrot, cardamom powder, cashew nuts and whisk gently until they are well mixed.
  4. Coat a baking tray with butter. Now pour this batter and spread well.
  5. Pre heat the over to 350 degree Fahrenheit and bake it for at least 30 minutes. NOTE: To do cooked test prick the cake with tooth pick and when pull the prick out toothpick should not have any thing sticking to it. pick in few places to make sure cake is cooked.
  6. Cook the cake to room temperature and serve.
