INGREDIENTS:

  1. Raw rice - 1 cup
  2. Old cooked fermented rice (Pazhaya soru) - 2 cup
  3. Shallot (Sambar onion) - 10
  4. Fennel seed - 1 teaspoon (tsp.)
  5. Fresh Shredded coconut - 1/4 cup
  6. Turmeric powder - 1/2 teaspoon (tsp.)
  7. Oil - as needed
  8. Salt - as needed

PREPARATION:

  1. Soak raw rice submerged in water for at least 2 hours.. Drain the liquid from soaked rice. In a mixer or wet grinder add soaked rice, old rice (no liquid) and grind to a fine batter by adding water as needed.
  2. In a mixer add shallot (Sambar onion), fennel seeds, fresh shredded coconut, turmeric powder and grind to a paste. Now add this ground paste, salt as needed to the ground batter and mix well. Now let the batter ferment (overnight or whole day for making in evening.) NOTE: if the batter become sour you can add sugar and make it neutral.
  3. Now make appam and serve.

  7. Coat appam pan with oil and heat the pan.
  8. Take a ladle of batter and pour in the pan. swirl around and spread the batter so they are spread round. NOTE: you can spread with ladle like you do for dosai.
  9. Sprinkle oil. Cover with lid and cook until its done (cooked).
