INGREDIENTS:

  1. Karamani (black eye pea) - 1 cup
  2. Foxtail millet (Thinai) or Kodo Millet (Varagu rice) or Rice - 1/4 cup
  3. Chopped onion - 1
  4. Asafoetida powder - 1/4 teaspoon (tsp.)
  5. Fennel seed - 1 teaspoon (tsp.)
  6. Chopped Ginger - small piece
  7. Dry chili - 4
  8. Curry leaf - little
  9. Chopped Coriander leaf - little
  10. Shredded coconut - 4 teaspoon (tsp.)
  11. Oil - For deep fying
  12. Salt - as needed

PREPARATION:

  1. Wash well and soak karamani (black eye pea), foxtail millet (thinai) or kodo Millet (varagu rice) or Rice in water for at least 4 hours. Once soaked well drain all the water. In a mixer or blender add them along with dry chili, ginger, curry leaves, shredded coconut, salt and grind to coarse dough like we do for making vadai.
  2. In a bowl add the coarse grinded dough, onion, coriander leaves, asafoetida powder and mix well. Make equal size balls out of them and flatten them like we do for vadai.
  3. Heat oil in a pan for deep frying. In medium to low heat deep fry all the vadai to golden brown and serve.

NOTES:

  1. For better result fry the vadai in batches and make sure to fry them in gentle heat if you cook them in high heat the inner of the vadai wll not be cooked well.
  2. Karamani (black eye pea) has high protein and good source of Iron.
